Awesome Fallen Chocolate Cake With Chocolate Whipped Cream

材料 人数 8人

cake:
high quality dark chocolate 113g + more for garnish
high quality semi sweet chocolate 113g
unsalted butter 113g + more for greasing
granulated sugar 1 cup
egg yolk 6
egg white 6
cream of tartar 1 tsp
pure vanilla extract 1 tsp
chocolate whipped cream:
whipping cream 2 cups
high quality unsweetened cocoa powder 1/4 cup
icing sugar 2 tbsp
pure vanilla extract 1 tsp

作り方

  1. I am using a 9" spring round cake mold. preheat oven to 180 degrees. grease the mold lightly with butter. cut a round parchment paper and line it on the bottom of the mold
  2. melt butter and the chocolate in a double boiler or a hot water bath. set aaside in another bowl, whisk egg yolks and 1/2 cup of sugar until it becomes pale yellow. while still whisking, gradually add in the chocolate mixture and vanilla extract. continue whisking until well combine. do not over mix
  3. in another bowl, whisk egg white and cream of tartar until soft peaks. while still whisking, gradually add in the remaining 1/2 cup of sugar. whisk until stiff peaks
  4. fold 1/3 portion of the egg white mixture into the chocolate mixture. continue folding the remaining egg white mixture into the chocolate mixture. fold gently and do not over mix
  5. transfer the cake batter into the mold and wack into the oven. bake for about 40 minutes. when you insert a toothpick into the cake, the toothpick should comes out clean. remove from oven and let cool completely before unmolding. once cooled, the cake will crack, sink and become "fallen"
  6. while the cake is baking, lets prepare the chocolate whipped cream: in a large bowl, whisk together whipping cream, cocoa powder, icing sugar and vanilla extract. whisk until soft peaks. set aside
  7. once ready to serve, scoop the whipped cream on top of the "fallen" cake. spread evenly. shave some dark chocolate to garnish. serve! voila! awesome fallen chocolate cake with chocolate whipped cream
Point I used valrhona for all my chocolate products. you can make the cake and the whipped cream the day before serving. do not unmold the cake, instead wrap it with aluminum foil and keep at room temperature. you can keep the whipped cream in a container in the fridge.
