New York White Pizza

new york style pizza dough	1 dough ball
fresh homemade ricotta cheese	1 1/2 cups
sea salt	1/4 tsp
dried thyme	1/4 tsp
black pepper	pinch
white sauce:
extra virgin olive oil	1 tbsp
yellow onion finely diced	1/2
garlic finely minced	1 clove
heavy cream	1/8 cup
dried thyme	1/4 tsp
sea salt	pinch
black pepper	pinch
freshly Italian parsley roughly chopped	a handful

lets make the white sauce: in a sauce pot over medium heat, drizzle in olive oil. once the oil is heated, add in onion. saute until the onion is translucent and add in garlic. saute for another minute. add in cream and bring it up to a simmer, about 3 minutes. remove from heat and transfer to a mixing bowl. stir in the thyme and season with salt and pepper. the sauce can be kept in fridge for up to 5 days

lets prepare the pizza: you can find directions, tips and tricks in my new york style pizza dough recipe. preheat oven to the highest. place the pizza stone in the middle rack or inverted baking tray
in a small mixing bowl, add ricotta, thyme, salt and pepper. mix to combine well. once the pizza is shaped, spoon the white sauce over the pizza leaving a 1/4 inch border along the edge. spread the ricotta mixture evenly on top of the white sauce
carefully and gently slide the pizza onto the pizza stone or the inverted baking tray. bake until the top is molten brown and slightly charred and bottom is crisp and brown. remove the pizza from the oven, immediately garnish with parsley. slice and serve! voila! new york white pizza!
