Murgh Makhani (Butter Chicken) + Raita Sandwich w/ Indian Spiced Sweet Potatoes Chips

diced boneless skinless chicken thighs 500g
kashmiri chilli powder 2 tsp
juice of lemon 1
salt pinch
yogurt 1/2 cup
ginger garlic paste 4 tsp
garam masala 1/2 tsp
mustard oil 2 tsp
coriander powder 1/2 tsp
butter 3 tbsp
green cardamon pods 5
cinnamon stick 1"
cloves 4
chopped onion 1
chopped garlic 3 cloves
green chilli roughly chopped 2
chaat masala 1/2 tsp
tomato puree 8oz
cream 1/2 cup
honey 2 tbsp
dried fenugreek leaves 1 tbsp
sweet potatoes sliced 500g
kashmiri chili powder 1 tbsp
chaat masala 1/2 tbsp
sugar 1 tbsp
olive oil 1/8 cup
coriander chopped a handful

作り方

  1. lets make butter chicken. cut the boneless and skinless chicken thighs into dice pieces. in a bowl, combine chicken with 1/2 tsp of kashmiri chilli powder, lemon juice and a pinch of salt. keep in fridge for 30 mins.
  2. in a bowl, combine yogurt, ginger garlic paste, 1/2 tsp kashmiri chilli powder, garam masala, mustard oil and a pinch of salt. stir to combine well. pour this mixture into the chicken. marinade for 4 hours to overnight
  3. once the chicken had marinaded. in a frying pan, melt some butter and sear the chicken until about 80% cooked. pour the chicken together with the juice onto a plate and set aside. do not throw away the marinade.
  4. in a large sauce pan, melt 1.5 tbsp butter, whole garam masala. add in chopped onion, chopped garlic. stir fry until onion translucent. add in green chilli, 1 tsp kashmiri chilli powder, 1/2 tsp garam masala and chaat masala. add in 8oz of tomato puree. stir to combine well
  5. remove the cinnamon stick and discard. in a food processor, blend the mixture till smooth. do not do this while the mixture is hot.
  6. pour the blended mixture back into the pan, add in the marinade and the chicken. add in honey, dried fenugreek leaves, pinch of salt. taste for seasoning. lastly add in 1/2 cup of cream and stir to combine well. the butter chicken is done
  7. lets make sweet potatoes chips. peeled and rinse sweet potatoes. you can chop up the sweet potatoes into slices or you can use a mandolin slicer to speed things up
  8. in a large bowl, transfer the sweet potatoes, add in olive oil, chaat masala, kashmiri chilli power and sugar. mix well to combine
  9. heat up a sauce pan with oil enuff to deep fry. drop in the sweet potatoes gently or the oil will splash. once you see the potatoes slices start to curl up, continue frying for about 1-2 mins. remove and drain on paper towel.
  10. let the chips cool down and season with salt. serve with the sandwich
  11. lets assemble the sandwich. spread some raita onto the sandwich, top with a spoonful of butter chicken and top with chopped coriander. voila! an indian theme sandwich with sweet potatoes chips
