Chicken Katsu with Japanese Kare in Ramen Sandwich

Instant Ramen 4 Packets
Beaten Egg 4
Aluminium Foil
Skinless Boneless Chicken Thighs 500g
Flour 1 cup
Paprika 1 tsp
Cayenne 1/2 tsp
Ginger Powder 1/4 tsp
Cumin Powder 1/4 tsp
Onion Powder 1 tsp
Garlic Powder 1 tsp
Salt & Pepper pinch
Panko
Butter Milk 1 cup
Onion 1
Carrot diced 1
Potato diced 1
Garlic grated 2 cloves
Ginger grated 1/2 inch
Curry Powder 1 tbsp
Olive Oil 2 tbsp
Canned Tomato 7oz
Veg Stock 1 1/4 cup
Dried Bay Leaf 1
Jap Curry Block 25g
Apple peeled 1/2

作り方

  1. Lets make ramen sandwich. Follow the instant ramen packet instructions. Discard away all seasonings. Cook 1 packet at a time, this is to make sure equal portions.

  3. After the ramen had cooked, drained and put inside a bowl of 1 beaten egg. Mix well. Cut the aluminium foil in rectangles, divide the ramen into 2 equal portions. Place the ramen into 2 aluminium foils. Fold the foils into sandwich sized squares and keep in fridge.
  4. Now lets make Japanese curry. Cut the onion in half. Chop half the onion into fine pieces. Chop the other half into wedges.
  5. In a sauce pan over medium heat, add in olive oil. Add in finely chopped onions and saute for about 2 mins.
  6. Turn the heat down to medium low, add in grated ginger and garlic. Saute till aromatic. Add in curry powder.
  7. Add in veg stock, carrots, potatoes and onion wedges. Stir a bit to combine. Add in canned tomatoes. Break the bay leaf in halves and add into the curry. Stir abit to combine.
  8. Turn the heat down to low. Cover and simmer for 10 mins. In the meantime, you can peel the apple, cut in half and cored. Place the apple in a bowl of salted water.
  9. Remove cover and turn off heat. Break Japanese curry block into pieces and add into the curry. Grated the 1/2 apple into the curry. Turn the heat back to low, cover and simmer for another 2 mins and the curry is done.
  10. Now lets prepare the chicken katsu. Combine flour, paprika, cayenne, ginger powder, cumin powder, garlic powder, onion powder, salt and pepper well in a plate.
  11. Cut the chicken thighs into sandwich size pieces. Dredge the chicken thigh into seasoned flour, dip into buttermilk, back into the flour, back into buttermilk and lastly dredge onto panko.
  12. Heat dutch oven with oil. Using a chopstick to check if the oil is hot enuff. If theres bubbles surround the chopstick, its hot enuff.
  13. Drop the chicken gently away from you. Deep fry till golden brown on both sides. Remove and rest on paper towel.
  14. Remove the ramen from fridge. In a frying pan with oil heated over medium heat. Drop the ramen and pan fry. When the edges starts to turn golden brown, flip and continue frying for about 2-3 mins.
  15. Now lets assemble. Place 1 ramen onto a plate, spread the Japanese curry, place the chicken katsu, spread some more of the curry and top it off with the remaining ramen. Voila! Ramen Sandwich in awesomeness!
